Lemon Verbena
In my latest video, we harvest lemon verbena for drying. Please watch and share! The lemon verbena dried inside in four days! I was also told if you dry herbs in a dark place, they will retain more of their original color. I had had them in the window sill, so I moved them to a lower shelf in my kitchen. Nest step is crush the leaves and store in airtight jars.
Here are a few lemon verbena uses, from my guest, Sausan.
Lemon verbena leaves are used to add lemon flavor to vegetable marinades, fish and poultry dishes, salad dressings, puddings, jams, Greek yogurt, and beverages. The plant is also used to make lemon verbena tea wherein the leaves are dried and steeped.
Cooks have found lemon verbena’s bouquet offers an alternative to other lemony flavors such as lemongrass or lemon balm. In taste, it’s closest to lemon zest but with a stronger aroma. The leaves and edible flowers turn up in martinis, ice cream, syrups, sun teas, pesto, salad dressing.
Lemon verbena has been used as a medicinal plant for centuries to stop muscle spasms, as a fever reducer and sedative, for indigestion, and to increase appetite, among other indications. Research regarding its medicinal use is limited. The leaves and flowering tops are used in teas and as beverage flavors.

I love growing lemon verbena. A cup of lemon verbena tea after a hard day relaxes, soothes the nerves and refreshes a tired body. It also reduces muscle tension that often accompanies psychological stress. Consuming this tea is a great way to speed up the recovery process and to protect you from getting sick in the first place. It’s in the first place in my garden and the best of all that i harvest my lemon verbena twice a year!
