Cushaw Cashew Bisque
1 tbl organic ghee
2 medium leeks, sliced
2 cloves crushed garlic
1 medium peeled and cubed cushaw squash
1 1/2 c. whole, raw cashews
½ tsp nutmeg
½ tsp ground cumin
½ tsp sea salt
6 c. water or broth
fresh pepper
1 ½ c corn
1 Jalapeno pepper, whole
3 tbl. cashew cream or heavy cream
¼ roasted cushaw seeds
2 tbl. White miso
Melt ghee over medium heat, stir in garlic and leeks, cook gently for two minutes. Add remaining ingredients, cook till tender. Remove pepper. Remove from heat and stir in miso, puree. Garnish with cashew or heavy cream and roasted cushaw seeds. Serve and enjoy!
